The screw underneath the upper part of the mandoline adjusts the depth of cut.   The depth of cut is shown by the indicator on the side of the tool.  The horizontal blade can be removed for cleaning by releasing the finger screw underneath the lower part.  The vertical blade bars are pushed in from the side, adjacent to the depth of cut indicator.

Take care:  sharp blades.   Always use the food guard to protect your hand when using the mandoline.   Always have the depth of cut set to zero when not in use
